Cherry rosé compote

Description

With just a handful of ingredients you can make a super easy compote to put on anything and everything! Top ice cream, swirl it into yogurt or add it on a quick cheese board - it's all fair game!


Ingredients

Scale
  • 1 lb pitted cherries, fresh or frozen
  • 1/2 cup sugar
  • 1/2 cup rosé wine
  • 1 teaspoon lemon zest

Instructions

  1. Combine 1 lb cherries, 1/2 cup sugar, 1/2 cup rosé and 1 teaspoon lemon zest in a medium-sized pot. Heat over medium until cherries break down and start to release liquid.
  2. Stir well and reduce heat to medium-low. Let simmer for 30 minutes, stirring occasionally until cherries are mostly broken down and some of the liquid has evaporated (the compote will thicken as it cools, so don't worry if it looks a little liquidy).
  3. Let cool and store in the fridge for up to 2 weeks.
