    Warm cranberry and onion brie

    Warm cranberry and onion brie

    Ingredients

    Scale
    • 1 wheel brie
    • 1 tablespoon olive oil
    • 1 small onion or shallot, thinly sliced
    • ¼ teaspoon salt
    • 2 teaspoons balsamic vinegar
    • 1 tablespoon rosemary, chopped
    • 1 tablespoon maple syrup
    • ½ cup cranberries (fresh or frozen is fine)
    • Balsamic glaze (optional)


    Instructions

    1. Preheat oven to 400.
    2. Place brie on a small oven-safe plate or baking sheet. Loosely cover with foil and bake for 10 minutes.
    3. While brie is in the oven, heat oil in a small saucepan over medium heat. Add onion and salt and let cook for 10-12 minutes until onions are soft and starting to caramelize.
    4. Add balsamic vinegar, rosemary and maple syrup and let cook for an additional 5 minutes.
    5. Add cranberries and let cook until they soften and start to break down, about 5 minutes. Turn off heat.
    6. Pour cranberry mixture on top of brie (it will be out of the oven now). It’s okay if some of it falls down the side, but you want most of it on top.
    7. Put brie back in oven and bake for 10 minutes.
    8. Drizzle balsamic glaze and serve warm with crackers, crostini or cut vegetables.

    • Cook Time: 25 minutes

    I keep meaning to throw a fancy holiday party, but it just never seems to happen. I'm the first to admit that I prefer a more casual vibe when it comes to hosting parties, but I love the idea of doing something a little fancy this time of year. 

    At some point in this life I am going to get dressed up, invite my friends over and do the damn thing. Promise. And it's definitely going to be a "cookies and cocktails" party because OF COURSE IT IS, but I already know I will also want to provide too many appetizers to help balance out alllll the cookies. 

    So say hello to this brie. Oh, this brie. Warm, savory, gooey brie. It's the perfect addition to your favorite cheese board, yes. But let's be honest - it can basically replace an entire cheese board. It's hard to get people excited about olives and cubes of cheddar cheese, when you've got this staring you down. 

    This might feel a little high-maintenance for a small appetizer, but I promise the flavors are so good. Sweet, caramelized onions. Tart cranberries. Sharp balsamic vinegar. Earthy rosemary. Sweet maple syrup. It's all there poured over warm brie, and scooped up with toasted baguette slices. 

    I mean.
